Sooji(Rava) Raspberry Cake
Sooji( rava) raspberry cake, a cake that can be made using a pressure cooker. Can you think of any cake without maida, egg, tons and tons of butter, creams. Well, here is a fluffy cake made using rava (Sooji) ,sugar, milk, yoghurt, and a little spoon of butter.
It’s super easy to make if you follow the steps properly even a small kid can make this cake. You can add any flavor to it and name it as per the flavours. I do not know one bit of baking but my little girl nowadays make me attempt a lot of things for the first time and thankfully it’s all turning out well. Thanks to the Pillsbury idli cooker cake, which is when I came to know even cakes can be made using pressure cooker but I did not really attempt any before my marriage.
My first attempt was with chocolates biscuits and banana combination, a cake made using pressure cooker and that was my first ever cake I made that happens to be for my blog and of course for my little girl.
This Suji cake may not be super soft as there are no eggs and maida however it has its own texture which is slightly at the softer side and it’s a cake with mildly sweet so its goes a good combo for your evening teas .
You can as well pack this in kids lunch box too with some fruits along with it, at times a little different to the routine lunch box receipes.
Sooji Raspberry cake
Cook time: 30 minutes
Prep time : 15 minutes
Total cook time :45 minutes
Sooji: 1 cup
Sugar: 1/2 cup
Milk: 100 ml
Yogurt: 50 ml
Butter: 1 tbsp
Ghee: 1 tbsp
Raspberries: 1 tbsp
First puree the raspberries using little milk and keep aside.
Take a large bowl, add rava, powdered sugar, yogurt and mix well.
Add the pureed raspberries and milk and mix well without forming any lumps.
Add spoonful of ghee and combine all together well.
Basically we are mixing everything in a bowl but step by step not all at one go.
Once the batter is ready grease the plate with butter add some flour and dust it.
Now pour the mixture on to the greased plate.
Pre-heat the pressure cooker without gasket and whistle for about 15 minutes.
Now bake the cake for 30 minutes.
After 30 minutes the cake is ready to be served with a cup of coffee/tea.
