My today’s recipe “Horse Gram Sprouted Salad”,revolves around a small crop, “horse gram”, a lentil which can do a lot of miracles to our overall health. The name “horse gram:”, is derived by the fact that this crop is served to cattle & horses. This also is called as “Kollu” in Tamil, “Ulavalu” in Telegu, “Killjoy” in Hindi, “Kuthikalai”i in Bengali & “hurule” in Kannada.

It’s one of  the best protein rich lentil identified on this planet. Considered to be high in iron and calcium too.. It grows mostly in dry agricultural lands but it is always been a under rated crop however these days it’s finding its place in most kitchen due its high nutrient value 

It’s slow digestible starch makes it an excellent choice for diabetics .it burns fat fast so helps obesity patients too. Low in lipid and sodium content too it is an  antioxidants, anti fungal and antibacterial too. Horse gram has been extensively used in ayurvedic treatment.

Traditional medical books refers that it’s been used to treat kidney disorders &  heart disease and heart disease. Horse gram sprouted salad also helps keeps our body warm during winter and residual boiled water helps relieve cold & cough..

Today am presenting a simple salad using boiled  horse gram sprouted salad excellent for diabetics otherwise also in general a healthy salad. 

Ingredients:

Boiled sprouted horse gram: 1 cup 

Boiled peanuts: 1/2 cup

Chopped onions, beetroot: 1/4th cup

Chopped Coriander leaves 

For Dressing:

Lemon juice 

Salt

Pepper powder

Olive oil drizzle. (optional) 

Step:

Boil the spouted horse grams (making sprouts from horse gram is simple sad over night and the next day dry the water cover it in a air tight container. After 24 hrs  you will see them sprouted already. 

Keep the boiled horse gram aside by straining the water. Don’t through away the water it’s highly nutritious I will be posting soon how to make soup using that. We also can use it towards preparing rasam.

Take a large bowl add all the ingredients along with the dressing sorte gently and have it along with a slice of bread.. It’s serves as a complete meal for diabetics.

Ingredients

  • 1 cup Boiled Sprouted Horsegram
  • 1/2 cup Boiled Peanuts
  • 1/4 cup Finely Chopped Onions
  • 1/4 cup Beetroot
  • Chopped Coriander Leaves

Dressing

  • 2 tbsp Lemon Juice
  • 1 tbsp Pepper Powder
  • 1 tbsp Olive Oil
  • Salt as per Taste

Instructions
